Products
To produce Be Cacao, the work begins with the acquisition of selected cocoa beans, which undergo a thorough roasting process, break grinding, pressing and micronization, thus guaranteeing the best aroma and flavor characteristics.
Natural Cacao Powder
Becacao natural cocoa powder contains antioxidants and more flavonoids than blueberries or green tea. It has a high acidity level, that when used for baking it causes it to rise. In terms of flavor, the natural cocoa powder is what highlights the cocoa raw material the most. Very nutritious.
Alkalized Cacao Powder
Undergoes an alkalinization process – reaching pHs above 6.0. It already has alkaline “bases”, such as sodium carbonate, sodium bicarbonate, which neutralize the acidity of cocoa. It has a darker color when compared to natural cocoa, a softer flavor, and improves the dispersibility in liquid substances. Since cocoa is not acidic, it will not react with sodium bicarbonate, or any other alkaline product, which is why it is normally used in powdered chemical yeasts.
Alkalized Cocoa Black Powder
This product undergoes a rigorous alkalinization process, which allows it to achieve the maximum “Black” color. It is ideal cocoa for mixtures where the main function of cocoa powder is to be a coloring agent, as an excellent secret in building a color palette in foods, being also widely used in syrups, such as ice cream syrups.
